At the recent IFEX 2025 Manila, amidst the vibrant hum of food stalls and the irresistible aroma of global flavors, I stumbled upon a gem: Dielle’s Apiary & Meadery, Inc. Their booth stood out—not because it was the flashiest, but because it radiated a kind of quiet pride and warmth that felt genuine.
I was welcomed by one of their staff (I regret not catching his name!) who had the enthusiasm of a sommelier and the charm of a true storyteller. He spoke about honey wine—or mead—as if each bottle carried a piece of their journey, from backyard beekeeping to becoming one of the Philippines’ standout artisanal producers.

I took a sip, expecting a polite sample… but ended up tasting more than a few. From their classic floral honey wine to the bold, berry-infused variants, each flavor had a personality of its own. Dielle’s story began in 2002 with just four humble bee colonies. By 2007, they became a registered company, and with the help of DOST-NCR’s SETUP program, they scaled from backyard fermentation to a full GMP-compliant facility. As of 2018, they’ve been producing over 1,000 bottles a day.
Today, their bee farms span Muntinlupa, Batangas, Lipa, Tanawan, and Cavite, fueling an impressive lineup of over 20 mead and melomel variants.
